Artisan cake maker adds punch to traditional Christmas cake

Deli Muru, the artisan bakery and chutney business in Northern Ireland, has teamed up with another local producer, Dunville Irish Whiskey, to create a richly flavoured Christmas cake with added punch!

The product is a traditional Dundee cake with fruits such as currants, sultanas, fruit peel along with almonds to which Kay Armstrong, the founder of Deli Muru, has added the award-winning Dunville Premium Single Malt Irish Whiskey from Echlinville Distillery in Kircubbin, county Down.

Deli Muru supplies its products to leading delis in Northern Ireland and has business in Britain. The new cake comes in a gift tin and retails at around £9.95.

Dunville has won gold medals in the International Spirits Awards as the Best Irish Single Malt Whiskey under 12 years of age. It was also successful in the recent Irish Whiskey Awards.

Kay Armstrong, commenting on the new cake, says: "I wanted to give the traditional Dundee cake a different flavour and decided to link up with another local business, Echlinville Distillery, the producer of Dunville, among the best-known names in Irish Whiskey.

"I've used other locally produced spirits such as Shortcross Gin from Rademon Estate Distillery at Crossgar in county Down and Hilden Ale of Dunmurry, county Antrim in my chutneys and relishes.

"There are very many artisan businesses here providing products which make outstanding ingredients. I try to work with as many as practicable in the products I am developing."

She set up Deli Muru in 2013 to develop, produce and market a range of relishes, chutneys, jams, shortbread, oatmeal cookies and biscuits for cheese, several of which gained national awards from organisations such as the UK Guild of Fine Food. Her love of baking led to the launch of an artisan range of fruit cakes in 2014.
