New product adds extra passion to lamb


Passion Preserved, the award winning developer of chutneys and relishes, has created a new product for use with lamb.



The small company's Herb Jelly uses an Armagh bramley apple base with mint and herbs grown by Claire Kelly, founder of the business, which has won UK Great Taste Awards, and is now selling to customers in the Republic of Ireland. The jelly is provided in 228ml jars.



Claire Kelly, commenting on the new jelly, says: "I wanted to create a new product to compliment lamb that's widely available at the moment. All the ingredients are grown by me using extensive polytunnels at home and a purpose-built development and processing kitchen."



She gave up a successful career running her own accountancy practice to pursue a passion for food preparation and settled on chutneys, relishes and pickles for use as dips, cooking sauces, marinades and condiments.She launched the small business in 2013.



Based near Lisburn in county Antrim, she produces an extensive range without artificial colourings or preservatives and made in small batches to ensure quality and consistency.



"Having my own vegetables close at hand in my large garden means that I can ensure that my produce is made from the freshest ingredients," she adds.



"I've always been interested in making food that's different and tasty," Claire says.



"Even at university, where I was studying accountancy, I considered starting a small business focusing on products like relishes and chutneys that I was developing."



While most of the recipes for the relishes are created by Claire, she's also borrowed ideas from friends at home and abroad. She's developed a range of products - Sunshine Relish, Indian Inspired Tomatoes, Sweet and Spicy Cucumber, Kasundi and Aubergine and Garlic, now Herb Jelly for glazing lamb.
