
‘Hottest sauce’ launched by Belfast specialist producer
Rock A Doodle Do, the Belfast hot sauce company, has created what it says “may be one of the UK’s hottest natural sauces”.
The latest hot chilli product is part of the small company’s 'Hidden Treasures' range and is known as Banshee Extreme Wing Challenge Sauce. It is made from two of the world’s hottest chillies – Carolina Reaper and Ghost Chill – and features totally natural ingredients with no chemical extracts.
Dave Kernaghan, the founder and managing director of Rock A Doodle Do Sauces (www.rockadoodledo.com), which has produced a range of hot and spicy sauces for award-winning rock band Snow Patrol, explains: “Hidden Treasures is our small batch custom brand which uses newly bred or rarely used chillies. These are usually extra hot versions of our standard sauces.
The ingredients also include Habanero Chillies and aged Cayenne for what Mr Kernaghan adds is a “devilishly hot, Louisiana style wing sauce”.
"Hidden Treasures allows me to make small batches of weird and wonderful sauces that don’t make it into full production…or might do further down the line.
“The range basically enables me to be creative with ingredients, flavours, and heat levels, and our customers seem to love the fact that something new comes out on a regular basis, usually every couple of months,” he adds.
The small batch hot spicy sauces are also used in competitions, wing challenges, and are available in one litre containers as well as 200ml bottles.
“There aren’t any extracts used in this sauce, just fresh, roasted ingredients that are slow cooked and reduced over 24 hours for a quality, extra hot experience,” he adds.
Mr Kernaghan, a lover of extremely hot sauces, decided to set up Rock A Doodle Do in 2015 on the back of experience over 30 years in making his own sauces at home to accompany meals. Rock A Doodle Do also reflects his love of rock music.
His award winning collaboration with Snow Patrol came through a contact and has seen him produce a five-strong range of hot and quirky sauces for the band to help raise funds for the Music for All charity. The sauces are sold at all the band’s gigs worldwide and are available online.
He teamed up with the band in 2018 with outstanding success in terms of global sales. He also makes custom batches that come in premium glass Skull bottles.
The Snow Patrol range will shortly go on sale in chain of bars in London including the hugely popular Sun Tavern in Bethnal Green.
