New venison product launched by fine meat business
O'Doherty's Fine Meats, the award winning Northern Irish butchery business, has launched an innovative venison product for its rapidly developing sales abroad.
The new product is a Wild Venison Terrine that's based on the experience of the business in providing fresh game to customers in Northern Ireland. The terrine, available in 300g packs retailing at £8.99 uses Sika deer from another local supplier, the Brookborough Estate in county Fermanagh.
O'Doherty's, based in Enniskillen, also in Fermanagh, has developed the terrine in response to requests from local customers and those using its website.
A key market for the new product is foodservice including chefs in Northern Ireland, Great Britain, the Republic of Ireland, other parts of Europe and further afield including Australia.
Pat O'Doherty, managing director of the family-owned and run business, commenting on the terrine, says: "We've seen considerable interest in venison over the past few years especially from leading chefs who have been using our renowned Fermanagh Black Bacon in their dishes.
"The Wild Venison Terrine is based on a unique recipe that I've developed and includes venison, turkey and pork with herbs and spices. Interest in the meat has been developing because it has a lower fat content than beef.
"While it's ideal served cold with a sweet chilli chutney, the terrine can also be grilled and cooked in an oven. It has a very rich flavour from the free range deer on the nearby Brookeborough estate," he adds.
O'Doherty's Fine Meats is among the most innovative butchery businesses in Northern Ireland with a track record of success in major food competitions in Britain.
As well as Fermanagh Black Bacon, O'Doherty's has won acclaim for its development of Fermanagh Corned Beef from an ancient recipe and for his beef burgers.
O'Doherty also launched Ireland's first Black Pudding Festival in 2013 to help expand interest in the food. The third annual Black Pudding Festival will be held in Enniskillen in September when pudding from more than 20 countries from around the world will be showcased.
