Novel black pudding product from Northern Irish butcher

The winning entry in an all-Ireland competition for new black
pudding-based products is to go into production at Northern
Ireland's award winning O'Doherty's Fine Meats.

The successful product is black pudding with goat's cheese in a
filo pastry wrap. The product, developed by black pudding enthusiastBasil Millar, who is from Crawfordsburn in county Down, won the
competition at the end of the Ireland's only annual Black Pudding
Festival.

The competition was judged by top chef Noel McMeel, executive head
chef at the five-star Lough Erne Hotel and Resort, near Enniskillen in county Fermanagh.

The Black Pudding Festival is organised annually by Pat O'Doherty,
owner and managing director of O'Doherty's Fine Meats in Enniskillen, county Fermanagh.

O'Doherty launched the festival to revive interest in black puddings, a traditional product, particularly for breakfast, in Ireland.
The initiative carried forward his longstanding interest in
historical foods.

This interest has led to his development of dry-cured Fermanagh
Black Bacon and Fermanagh Corned Beef, two products which have won
international recognition for outstanding taste and quality.

The competition was open to all consumers including chefs,
challenging them to come up with novel ways of using black puddings.

Pat O'Doherty says: "Black puddings were made in Ireland for
generations but have fallen from favour especially among younger
consumers. I decided to run a competition to encourage people here
to come up with new ways of using a product that was part of the
stable diet of farm families in Ireland for centuries.

"As well as looking for traditional family recipes, we were keen to see what chefs and foodies would come up in terms of new ideas. The competition produced some really interesting ideas including black
pudding ice cream, an idea in line with the current market trend
towards savoury ice cream flavours.

"The winning entry, black pudding with goat's cheese wrapped in filo pastry, was by far the most popular with the judge. It's a great
tasting product that we are keen to commercialise especially as a
different starter for meals," he adds.

In business for over 40 years, O'Doherty's Fine Meats was recently
named Northern Ireland Butcher of the Year in a national competitionrun by the influential Meat Trades Journal.
