Gourmet burger buns for better flavour

A gourmet burger bun has been developed by Yellow Door, an award
winning bakery and artisan food business in Northern Ireland.

The bakery, headed by top local chef Simon Dougan, has won a string of UK Great Taste Awards for outstanding products and meals.

The new buns are made using buttermilk for a tarter taste than the
usual sweet brioche bread favoured for burgers. "Buns have generallybeen ignored in the market trends towards gourmet burgers," Simon
Dougan says. "We wanted to create a gourmet burger in line with the development of better quality burgers," he adds.

"Most restaurants, including high-end establishments, include a
burger on their menus. What we've done is to bring the burger bun into the gourmet experience, creating a bun with a different and
quality flavour that comes from the use of buttermilk."

The buns are also glazed with honey from Northern Ireland's artisan bee- keepers including Waggledance Honey in county Armagh. The buns are essentially hand made and finished using unbleached flour
without preservatives. The denser texture of unbleached flour also
provides more structure in the buns, which makes it an ideal base
for a gourmet burger.

The new burger buns - available in 80g, 100g and 120g formats - areaimed at foodservices particularly in the Republic of Ireland,
where Yellow Door has a portfolio of clients for its wide range of
products. They are the outcome of extensive market research
including contacts with restaurants in Northern Ireland and the
Republic of Ireland.

Based in Portadown, county Armagh, Yellow Door is among Northern
Ireland's most innovative food businesses and won UK Great Taste
Awards for signature deli dishes in successive years. In addition toits extensive and successful outside catering services, the company operates a deli business focusing on Northern Ireland artisan foods.

The Yellow Door began life as a fine dining restaurant in Gilford,
Co. Down in 1992. Due to demand for a more informal food offering
the Yellow Door Deli opened in Portadown in 1997. The restaurant waslater sold and the deli and bakery business expanded, giving rise toother delis and a busy outside catering business.
