Original and Rich flavours from Northern Ireland for Lunch
Top chef James Davidson will be cooking up some original flavours for visitors to the Northern Ireland Naturally stand (Stand 432) to enjoy at Lunch! 2012, the leading trade show for the latest out of home food and drink ideas and products.
Davidson, Executive Chef at Rich Sauces, the leading developer and producer of quality sauces, mayonnaises and bouillion for foodservice organisations in the UK, other parts of Europe and the US, has created a deliciously innovative menu using food from other manufacturers taking part in the event, on 20-21 September at the Business Design Centre in Islington, London.
Invest Northern Ireland, the UK region's business development agency, commissioned Davidson to create a menu to showcase how quality food from Northern Ireland can be used to provide new and original taste experiences.
"What I've developed is a unique and very tasty lite-bite menu using the superb food from Northern Ireland that will be showcased during Lunch. I've combined traditional Northern Irish favourites such as potato bread and crispy smoked bacon with contemporary flavours using a Cajun drizzle at breakfast. For brunch, I've taken prawns, another Northern Irish favourite, and added a sweet chilli mayo scented with fresh lime and coriander.
"Over lunch, visitors can enjoy award winning grass-fed dry-aged beef topped with mango chutney and soft blue cheese sauce. There'll also be Southern fried chicken goujons with a Mexican chipotle dressing in a flour tortilla toasted in a Panini grill. I've also given buttery croissants a deliciously different flavour by adding cream cheese anda new smoked salmon product with a sweet chilli drizzle.
"I've developed this original menu to show trade visitors the versatility of quality food now readily available in Britain from Northern Ireland suppliers. It gives them an opportunity to experience the excellent food that on offer from our suppliers, many of which have won gold stars in the UK Great Taste Awards.
"Indeed, the menu features bacon from Hannan Meats, recent winner of the Supreme Champion title in the Great Taste Awards for its Moyallon Guanciale. Other Great Taste winners featured include Fivemiletown Creamery - speciality cheese - beef from Kettyle Irish Foods and sauces, dressings and drizzles from Rich Sauces," he adds.
The event will also see the launch of the new smoked salmon produced by Ewing's Seafoods in Belfast, one of Northern Ireland's oldest suppliers of fish and other seafood, using organic salmon from Glenarm Organic Salmon in County Antrim, the region's successful fish farming business which already supplies its salmon worldwide.
Hannan Meats is the only business in Europe to use a Himalayan Salt Chamber to dry-age meat to produce richer flavours and texture.
Many of the companies on the Northern Ireland Naturally stand already supply foodservice customers in Britain and are part of the region's food industry, currently worth more than £3 billion annually. The industry also sells more than 60 per cent of its products to customers outside Northern Ireland and is now the region's biggest manufacturer.
