Shamrock Soda to mark St Patrick’s Day

Celebrate St Patrick’s Day at home with a sumptuous limited edition shamrock-shaped soda from Genesis Bakery in Magherfelt, co Londonderry / Derry. Whether you’re starting your St Patrick’s Day with a breakfast soda or ending the day with a sweet soda treat, Genesis has created the perfect base for adding your sweet or savoury topping.

So we thought that we would create a special shamrock-shaped soda especially for St Patrick’s Day. The limited-edition, shamrock-shaped soda can be enjoyed with some of my favourite green toppings for a tasty treat at any time of the day.”

Stephen’s green shamrock-shaped soda topping suggestions include; 

Avocado and Eggs – toast the shamrock-shaped soda halves with smashed avocado and top with poached eggs. Alternatively, place seasoned, sliced, garden tomatoes under the grill and serve in place of eggs.

Cheese & Onion – simply slice the shamrock-shaped soda in half and grate over your favourite cheese (mature cheddar works well for this). Top with sliced scallions and place under the grill until the cheese is melted and coloured to your liking.

Cucumber & Cream Cheese – Spread your shamrock-shaped soda halves (toasted or untoasted) with cream cheese and chives followed by a layer of sliced cucumber, topped with cress or spinach. Can be eaten open or as a sandwich.

Royale – Wilt some spinach and blend with a hollandaise sauce (store bought or for the more adventurous, homemade!) until smooth and green in colour. Toast your shamrock shaped soda halves and top with smoked salmon, a poached egg and douse with the green hollandaise.

Chocolate & Mint – Halve the shamrock-shaped sodas and cover with chocolate spread. Chop or break up some Aero mint chocolate and scatter on top.
